Recipe: 2-minute Easy Mediterranean Feta Dip

Craving a Mediterranean diet-compatible lunch or side that you can wip up in about 2 minutes, using simple ingredients and nothing more than a microwave?

Here in the Bay Area, following the Mediterranean diet is a way of life. And we’re also busy! So this is a perfect recipe.

Here’s how to make our 2-minute Mediterranean feta dip.

Ingredients

  • Half a cup of crumbled Feta cheese
  • 3 tbsp Extra virgin olive oil
  • Fennel seed
  • Oregano
  • Salt and pepper

How to Make It

Put the feta cheese into a microwave-safe bowl. Use crumbled feta.

Pour in 2-3 tbsp of olive oil, or more if you’d like. We recommend EVOO. Sprinkle fennel seed, oregano, salt and pepper over the feta to taste.

Microwave for 10-second increments until the feta begins to melt. Stir and repeat until melted and hot.

Dip pita bread, pita chips (we like Stacy’s) or veggies into your feta dip.
