Dublin’s New Cookie Spot Was Born From Midnight Cravings

DUBLIN, CALIFORNIA – Desert lovers in the Tri-Valley have a new reason to stop by Shamrock Plaza. Chip Cookies, a popular East Bay gourmet cookie chain, opened its Dublin location, offering freshly baked cookies and a weekly rotating menu of inventive flavors.

The shop, at 6851 Amador Plaza Road, joins two other locations in Walnut Creek and Brentwood. Chip Cookies is known for its thick, warm cookies available in signature flavors such as sugar chip, lava chip, Biscoff chip, tres leches chip, and more.

Customers can even customize their cookies with frostings, toppings, or vanilla ice cream.

In addition to cookies, the Dublin location also offers ice cream sandwiches, cookie cakes, and bags of cookie dough so you can bake your own cookies at home.

The chain began with a personal story. Founders Sean and Sarah were expecting their first child and often craved warm, gooey chocolate chip cookies in the middle of the night. Rather than just baking for themselves, they turned the idea into a business, starting to deliver fresh, gourmet cookies straight to customers’ doors.

Dublin customers can pick up cookies in store, order delivery through DoorDash, or have them shipped nationwide. Catering is also available for events. The shop is open daily from 10 a.m. to 10 p.m. Sunday through Thursday and until midnight on Fridays and Saturdays.

The prices reflect the gourmet quality of the cookies. Individual cookies come to around $5 each. Chip flip boxes are also available in both mini and regular sizes, ranging from $18 to $50.
